The manufactory Senf Pauli was founded in 2008 in Hamburg by Eva Osterholz and named after her favorite district and first residence.
Noting that passion for mustard and working with the hands is more important than a secure working relationship, Eva quit her job and plunged into the mustard world that she has not left since. At the first trade fair, she presented four types of mustard and self-printed labels. In the meantime the former hobby has become a manufactory with numerous products that supply delicatessen and fine gastronomy throughout Germany.
Today a creative team of ladies operates the manufactory.
Senf Pauli produces high quality products. They stand out with an great, unique taste and have one thing in common: they are produced in elaborate manual labor, as they can only give in the production of small quantities using the best ingredients, a lot of time and the abandonment of artificial additives.
Fresh and raw Mustard Seeds needs to be selected and dried. The right mixture give the direction of Hot, medium or mild. Then you can add natural flavors to it.
The Senf Pauli mustard is gently cold milled on a stone mill to preserve the valuable mustard oils. The manufactory receives the mustard seed directly from the farmer in northern Germany. The mixing of different spicy mustard seeds determines the degree of severity of mustard varieties. Also the vinegar variety is matched with Senf Pauli on the respective Mustard variety. It uses particularly mild, high-quality vinegars, in this way dominated not the acid in our mustard, but the taste of mustard and the ingredients. Every type of mustard gets its own individual flavor, which is elaborately refined with ingredients such as raspberries, figs or garlic. During a maturing period of several weeks, the full flavor unfolds, then it is bottled and labeled by hand.
When the seeds, fruits and other ingredients are mixed they will stay a couple of weeks to get all the flavors blended before bottled.
